Basil-Infused Vodka Gimlets

FOR BASIL INFUSED SIMPLE SYRUP:

1 cup sugar

1 cup water

1 cup fresh basil leaves

Made with fresh basil from our planter!


In a small pot, combine the sugar and water.

Place over medium heat and heat until the sugar has completely dissolved.

Turn off the heat and add the basil leaves.

Steep the basil in the simple syrup for 35 to 45 minutes.

Your kitchen will smell so nice!


Strain the syrup into an airtight container and chill in the refrigerator for at least an hour. This may be made several days in advance and will keep in the refrigerator for up to two weeks.

TO MAKE THE DRINK:

1 cup basil-infused simple syrup

¾ cup fresh lime juice

3 cups ice cubes

1 cup chilled vodka

6 lime wedges for garnish

6 sprigs of basil for garnish

RIP to the bottle of vodka I killed when I made this.


In a pitcher, combine the simple syrup, lime juice and ice.

Pour in the vodka and stir well until everything is chilled.

Divide among 6 martini glasses or stemmed cocktail glasses and garnish with the lime wedges and basil.

My Rating: 4/5 "These were really, really smooth and fresh-tasting. They're definitely an oops-I-knocked-this-back-fast-because-it's-so-good cocktail. My one disappointment was that I couldn't hardly taste the basil over the vodka and the lime. I know it was in there because the flavor really came through in the mocktail version I made for my mother-in-law with seltzer instead of vodka. I don't know how to fix that, but honestly even as-is the drink is great."
