Easy Chicken Bake

Stove Top

1 pkg. (6 oz.) savory herbs stuffing mix

1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces

1 can (10-3/4 oz.) condensed cream of chicken soup

1/3 cup sour cream

1 pkg. (16 oz.) frozen mixed vegetables (carrots, corn, green beans, peas), thawed, drained

HEAT oven to 400F.

PREPARE stuffing as directed on package.

COMBINE remaining ingredients; spoon into 13x9-inch baking pan sprayed with cooking spray. 

I forgot to thaw the vegetables first. Nothing bad happened.


Top with stuffing.

BAKE 30 min. or until casserole is heated through and chicken is done.

Note the use of the word "casserole" and not "hot dish."

My Rating: 4/5 "This gives pot pie vibes and since my partner loves pot pie he thought this was spectacular. I appreciated that it had a lot of veggies involved, and I always like stuffing so the topping made me happy. If you like this sort of flavor then absolutely make this cheap weeknight dinner!"
