Vegetable and Fruit Kugel Cupcakes

2 apples

1 large sweet potato

4 carrots

1 cup matzah meal

½ cup (1 stick) pareve margarine, melted

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

It's a nice combination of produce, that's for sure.


Preheat oven to 350F.

Peel and grate the apples, sweet potato, and carrots. Mix with the rest of the ingredients. Place 24 paper muffin cups in muffin tins. Pour the batter into the cups. They should be two-thirds full. Bake for 20-25 minutes, or until done.

See how it's squeezed-looking? That's what happened when I lifted it out of the pan. Because it's that smooshy.

My Rating: 2/5 "This isn't a total disaster because it doesn't taste completely awful and it looks like I think it was supposed to. But it's definitely not a cupcake. It's a lot of shredded stuff bound very loosely together with butter. It doesn't stay together when you pick it up. (Why aren't there eggs or something? A mystery for the ages.) And the sweet potato doesn't cook as much as it needs to in the oven so it's kind of stiff in the final product. I loved the idea and was very disappointed in the final product."
