Fiesta Chicken Salad

Fast Fixin’

Jumbo popcorn chicken

½ c. salsa

½ c. ranch dressing

8 c. mixed salad greens

2 tomatoes, cut into wedges

4 green onions, thinly sliced

1 can (15 oz.) dark red kidney beans, rinsed and drained

1 can (11 oz.) Mexican-style corn, drained

2 c. shredded cheddar cheese

Combine salsa with ranch dressing; cover and chill until ready to serve.

For salad, arrange the rest of the ingredients on a large platter, or toss together in a large bowl.

It's a very "White People Taco Night" spread.


The last point at which we might get away with referring to this as a healthy dish.




Heat popcorn chicken according to package directions. Top salad with popcorn chicken; serve with dressing on the side.

And with chips and dip, of course.

My Rating: 4/5 "This was a fun bunch of things. I really did enjoy the crispy chicken on top - it made itself the main attraction in a fun way. What was even better, though, was when I made this without the lettuce as leftovers and heated in in the microwave before putting the dressing on top. Because really what's the lettuce for, anyway?"
