1 bag hint of lime flavored tortilla chips
1 jar of avocado salsa
2 tbsp canola oil
2 tbsp poblano, diced
1 yellow onion, diced
6 cloves minced garlic,
½ cup roma tomato
½ tsp cumin
2 quarts chicken stock
1 ¼ tbsp salt
½ tsp black pepper
½ tsp cayenne pepper
1 cup cooked chicken, shredded
1 lime
½ avocado, sliced
Cilantro, garnish
Note: Eating hint of lime flavored chips while cooking
is encouraged.
In a pot, heat oil over medium-low heat. Cook the
poblano, onion and garlic until almost clear.
I went serrano instead of poblano. Shhh. It's a secret. |
Add the cumin and tomato, cook for 2 minutes.
Pour in the chicken stock and remaining spices, heat to
a simmer (smell those tasty spices yet?)
Stir in the shredded chicken and juice of half a lime.
Spoon into bowls. Crush a handful of hint of lime
flavored chips on top for extra crunch and zing.
Garnish with a fan of avocado slices, a dollop of
delicious avocado salsa, cilantro, and a lime wedge. Yum!

My Rating: 4/5 "There's a lot of flavor here, and that's what you're going to remember and enjoy. I was happy to have a dinner with pizzazz. A couple of caveats: The chips get soggy, predictably. There's also not nearly enough chicken included - I ended up adding more every time I ate a serving. But if you fix that, this is aces."
