Reuben Meatloaf

2 pounds ground beef or ground beef substitute, i.e. ground chicken, plant-based protein, etc.

1 package corned beef seasoning

1 large yellow onion, finely chopped

½ cup sauerkraut, drained

2 cups shredded Swiss cheese, divided

2 eggs

¼ cup bread crumbs

1/3 cup thousand island dressing

I got this food chopper for like five bucks at a garage sale this summer and it's made my cooking life much easier.

Walmart had nothing resembling corned beef seasoning, but this seemed like a good substitute. 


Preheat oven to 400F.

Using your hands, mix together meat, seasoning, onion, kraut, 1 cup shredded cheese, eggs, and bread crumbs in a large mixing bowl.

Place mixture onto a baking sheet and form into a loaf. Top with remaining cheese and dressing. 

You can already tell how good it's going to be.


Bake until cooked through, about 30-45 minutes, depending on the thickness or your loaf. Allow to cool before slicing.

It loses a little of the aesthetic after baking, but the taste! Oh, the taste!

My Rating: 5/5 "One meatloaf to rule them all. This is all the homey goodness you like about meatloaf and also all the decadent richness you associate with a reuben sandwich. Even the leftovers are great!
