2 tablespoons extra-virgin olive oil or
melted coconut oil, plus more to brush the pans
3 large sweet potatoes, scrubbed and cut
into thin wedges
1 teaspoon salt
1 teaspoon ground turmeric
½ teaspoon ground coriander
¼ teaspoon ground ginger
¼ teaspoon chipotle powder
1 lime
Preheat the oven to 400F. Brush two rimmed baking
sheets with olive oil.
Put the sweet potato wedges in a large bowl. Add 2
tablespoons of olive oil and toss to coat the potatoes.
In a small bowl, mix the salt, turmeric, coriander, ginger, and chipotle powder.

Sprinkle the spice mix over the potatoes, mixing
well to coat evenly.
Arrange the sweet potato wedges in a single layer on
the prepared baking sheets.
Bake until the sweet potatoes are tender in the middle
and slightly browned and caramelized on the edges, about 20 minutes.
Remove from the oven, squeeze lime juice over the
wedges, and serve.
The lime is the final dose of wonder on top of all the other amazing flavors. |
Served with a little rice mix that was quite mundane by comparison. |
