Smoked Salmon “Poke” Bowls

Latitude 45

8 oz smoked Atlantic salmon loin

4 cups steamed white rice

4 tbsp pickled ginger

2 shallots, sliced

1 jalapeno, sliced

1 avocado, sliced

½ English cucumber, sliced

1 cup wakame seaweed salad

½ cup edamame beans

1 tbsp sesame seeds

2 oz soy sauce

[Clever shallot pun here. I wanted one so bad and I'm blanking.]


Scoop steamed white rice into four bowls.

Place 1.5oz of salmon slices on top of the rice in each bowl.

Lay the rest of the ingredients in each bowl and sprinkle edamame beans on top.

So I turned this into a build-your-own bowl thing for an event I was helping with.


Garnish with sesame seeds and serve with soy sauce on the side.

This was mine after I went through the line.

My Rating: 4/5 "You had me at smoked salmon and seaweed salad. I had fun making and eating this. It was a little unwieldy to eat, mostly because of the edamame, but the overall taste was awesome. (When I served it at the event I put yum-yum sauce out as an additional condiment option and that went like gangbusters.)"
