Tomatesov Pilaf

The Armenian Cookbook, p. 82

1/8 pound butter

1 cup rice

½ cup tomato sauce

2 cups meat broth

Salt to taste

Melt the butter in a saucepan and add the rice. Stir over a low flame for a minute or two. Remove.

Oh, that buttery cooking smell.

Combine the tomato sauce, the hot meat broth, and the salt in another saucepan and bring them to a boil. Add the hot liquid to the rice and bring to a boil again. Lower the flame as much as possible and cover the saucepan. Simmer gently until the liquid is absorbed and the rice is fluffy.

Orrrrrr put it in the rice cooker!

Obviously a traditional Armenian dinner would also include Tyson barbecue chicken nuggets and a side of ranch. Or it would if my 4YO was involved, anyway.
