The Armenian Cookbook, p. 82
1/8 pound butter
1 cup rice
½ cup tomato sauce
2 cups meat broth
Salt to taste
Melt the butter in a saucepan and add the rice. Stir
over a low flame for a minute or two. Remove.

Combine the tomato sauce, the hot meat broth, and the
salt in another saucepan and bring them to a boil. Add the hot liquid to the
rice and bring to a boil again. Lower the flame as much as possible and cover
the saucepan. Simmer gently until the liquid is absorbed and the rice is
fluffy.

Obviously a traditional Armenian dinner would also include Tyson barbecue chicken nuggets and a side of ranch. Or it would if my 4YO was involved, anyway. |
