Peanut Butter Pie Bars

WalMart Family Cookbook, p. 85

CRUST:

2 cups all-purpose flour

1/3 cup sugar

½ cup (1 stick) margarine

FILLING:

2 eggs

¾ cup light or dark corn syrup

½ cup sugar

½ cup creamy or chunky peanut butter

2 tbsp. margarine, melted

1 tsp. vanilla extract

¾ cup dry roasted peanuts

For crust: In large bowl with mixer at medium speed, beat flour, sugar, margarine and salt until mixture resembles coarse crumbs. Press firmly into bottom and 1/4 “ up the sides of 13x9x2-inch baking pan coated with cooking spray.

Bake in 350F oven for 15 minutes or until golden brown.

For filling: In large bowl beat eggs, corn syrup, sugar, peanut butter, margarine and vanilla until very well blended. Stir in peanuts. Pour over hot crust; spread evenly.

Oh so corn syrupy.


Bake in 350F oven for 20 minutes or until filling is firm around edges and slightly firm in center. Cool on wire rack. Cut into 2x1 ½” bars.

And so peanutty!

My Rating: 4/5 "It's like pecan pie, but with peanuts! And even nuttier! These were delectable without being too rich. In fact, I could have handled them being richer. But they certainly were filling and fun."
