WalMart Family Cookbook, p. 85
CRUST:
2 cups all-purpose flour
1/3 cup sugar
½ cup (1 stick) margarine
FILLING:
2 eggs
¾ cup light or dark corn syrup
½ cup sugar
½ cup creamy or chunky peanut butter
2 tbsp. margarine, melted
1 tsp. vanilla extract
¾ cup dry roasted peanuts
For crust: In large bowl with mixer at medium speed,
beat flour, sugar, margarine and salt until mixture resembles coarse crumbs.
Press firmly into bottom and 1/4 “ up the sides of 13x9x2-inch baking pan
coated with cooking spray.
Bake in 350F oven for 15 minutes or until golden brown.
For filling: In large bowl beat eggs, corn syrup,
sugar, peanut butter, margarine and vanilla until very well blended. Stir in
peanuts. Pour over hot crust; spread evenly.

Bake in 350F oven for 20 minutes or until filling is
firm around edges and slightly firm in center. Cool on wire rack. Cut into 2x1
½” bars.

My Rating: 4/5 "It's like pecan pie, but with peanuts! And even nuttier! These were delectable without being too rich. In fact, I could have handled them being richer. But they certainly were filling and fun."
