2 tbsp. extra virgin olive oil
1 pint cherry tomatoes, halved
1 medium zucchini, chopped
1 small red onion, diced
½ cup green olives
½ cup basil leaves
½ cup goat cheese
12 oz. spaghetti
In a large skillet, heat the olive oil. Add the tomatoes, zucchini, and onion and saute on medium heat for 4-5 minutes until the vegetables soften.

Toss in the olives and basil and transfer to a large
serving dish.
Cook the pasta according to package instructions.
Before draining the pasta, remove ¼ cup of the pasta cooking water and mix
together with the goat cheese until creamy.
Toss the spaghetti and goat cheese with the tomato
mixture and serve.

My Rating: 4/5 "The vegetables are a little unwieldy, but the flavors are awesome together. (I got green olives that were stuffed with garlic and that increased the flavor blast.) I adore goat cheese, and the fact that I could eat pasta coated with it made me really happy. Even better was the fact that there wasn't enough of it to make me feel guilty about overindulging!"
