Spaghetti, Tomatoes, Zucchini, Olives, & Goat Cheese

2 tbsp. extra virgin olive oil

1 pint cherry tomatoes, halved

1 medium zucchini, chopped

1 small red onion, diced

½ cup green olives

½ cup basil leaves

½ cup goat cheese

12 oz. spaghetti

In a large skillet, heat the olive oil. Add the tomatoes, zucchini, and onion and saute on medium heat for 4-5 minutes until the vegetables soften. 

Good Lord I needed some vegetables in my life.

Toss in the olives and basil and transfer to a large serving dish.

Cook the pasta according to package instructions. Before draining the pasta, remove ¼ cup of the pasta cooking water and mix together with the goat cheese until creamy.

Toss the spaghetti and goat cheese with the tomato mixture and serve.

Pasta pasta pasta!

My Rating: 4/5 "The vegetables are a little unwieldy, but the flavors are awesome together. (I got green olives that were stuffed with garlic and that increased the flavor blast.) I adore goat cheese, and the fact that I could eat pasta coated with it made me really happy. Even better was the fact that there wasn't enough of it to make me feel guilty about overindulging!"
