Carlos J. Moorhead’s Chili

What’s Cookin’ with the Republicans, p. 80

1 pound ground sirloin, lean

1 cup chopped onion

Pinch minced garlic

2 (8-ounce) cans tomato sauce

1 (14 ½-ounce) can stewed tomatoes

2 tablespoons chili powder

½ tablespoon cumin

1 (6-ounce) can chili beans

1 (4-ounce) can green chilies, chopped

½-1 cup water, optional

Salt and pepper to taste

In non-stick pan over medium-high heat, brown sirloin, onion and garlic, using no additional fat.

We got beef.

Add tomato sauce, stewed tomatoes, chili powder, cumin, chili beans and chilies.

That's some serious chili powder.

Simmer 30-60 minutes or longer, as desired. If the mixture is too thick, add water. Taste and adjust seasonings to taste.

As you can see, I was sitting next to the baby and she had already demanded part of my slice of rye. She also ended up eating some of chili.

My Rating: 4/5 "This reminded me a lot of the chili at Wendy's. Hearty beefiness and the nostalgia trip make for a great combination. You might want to dress it up with cheese or sour cream or something just to add that final touch of yum."
