Blackened Catfish

Supreme Choice

4 catfish pieces, thawed

½ stick butter

¼ cup olive oil

SPICE: Mix together and store in a lidded jar

2 tablespoons sweet paprika

2-1/2 tablespoons salt

1 teaspoon onion powder

1-1/2 teaspoons garlic powder

1-1/2 teaspoons cayenne pepper

2 teaspoons lemon pepper

1 teaspoon whole thyme leaves

1-1/2 teaspoons whole basil leaves

This spice blend is a nice pantry cleaner-outer.


Heat iron frying pan over high heat. Melt butter and mix with olive oil. Place the spice mix on a plate. Drip the fish into the butter and oil and dredge on both sides in the spice mix. Fry in a hot pan for 6 to 8 minutes until done. 

I'm still not sure how to clean up my cast-iron skillet.


Catfish will flake easily with a fork. Assure adequate venting.

My Rating: 3/5 "This recipe is an exercise in too much of a good thing. I love things with a strong flavor, especially a strong Southern-fried flavor. This, though, goes above and beyond and gets overwhelming. I go through a filet with some green beans and sweet cornbread but I don't think I could have done it otherwise. I guess if you make this eat it in small portions with strong sides."
