Hummingbird Bundles

Real New Mexico Chile, p. 23

3 cups mango salsa

8 ounces brie, sliced

6 flour tortillas

1 ½ Tbsp. butter, melted

Since when does Newman's Own have a monopoly over, like, all the foods?


Preheat your oven to 400 degrees F. Divide the salsa and Brie slices among the flour tortillas and fold in all four sides to make a secure envelope bundle. Lightly oil a cookie sheet and place bundles on top. Brush bundles lightly with melted butter and bake at 400 degrees just until outsides are golden.


The only way I could make the bundles "secure" was with toothpicks. There was just too much stuff inside each of them to bundle very tightly.


Served with some fajita-marinated chicken a la Kroger.

My Rating: 3/5 "These sounded like so much fun, and then they were so weird. Like, I love brie en croute and I was interested to see this iteration of it. But they're too full of stuff to be easy to eat (despite the fact that the cookbook classified them as an appetizer). It's hard to keep them together to bake and a few of them split open and leaked during the baking process. All of that plus brie being a weird combination with salsa added up to some disappointment on my part."
