Chocolate Mayonnaise Cake

2 cups sugar

1 cup mayonnaise

2 large eggs

1 teaspoon vanilla

1 cup cold water

2 cups flour

2 teaspoons baking soda

6 tablespoons baking cocoa

Pinch of salt

Preheat the oven to 350 degrees. Grease and flour a 9” x 13” baking pan.

With a mixer, beat together sugar, mayonnaise, eggs, vanilla and water.

In a separate bowl, mix flour, baking soda, baking coca and salt.

So far so good.


Add dry ingredients to wet and mix just until combined.

Bake for 40 minutes or until a toothpick comes out clean.

It took an hour for the center to get done. By that time, the edges were burned.


Once the cake has cooled, frost with your favorite frosting and enjoy!

The frosting improved the appearance but not the taste.


My Rating: 3/5 "I felt weird about this the whole time. Like, the liquid stuff in the mixer was really watery and didn't seem to have a prayer of holding the dry ingredients together. The issue with cooking time was what really tanked everything, though. I had been told that mayonnaise cakes are rich and moist and delicious, but this one was none of those things. (I should note, though, that of the five people who ate it only myself and my 5YO didn't finish our servings. Everyone else seemed to think it was acceptable."
