Roasted Sweet Potatoes and Sweet Onions

Sand Candy

3 medium sweet potatoes peeled and coarsely diced

1 medium sweet onion, peeled and cut into 8 wedges

1 tsp. vegetable or olive oil

1 tbsp. melted butter

1 tsp. salt

1 tsp. pepper

¼ tsp. allspice

¼ tsp. paprika

1 tsp. chopped garlic

1 tsp. finely chopped fresh parsley

1 tsp. minced fresh thyme

I think part of the reason this didn't go so well was that I ordered the ingredients from DoorDash and the shopper picked out the most enormous produce they could find.


Preheat oven to 400F. In a large mixing bowl combine sweet potatoes and onion. Add oil, butter, salt, pepper, allspice, paprika and chopped garlic; mix well to combine.

Spread mixture evenly out onto a large baking pan.

Bake 20 to 25 minutes stirring halfway through baking. Remove pan from oven. Transfer to mixing bowl and sprinkle with parsley and thyme; toss to combine. Place mixture in serving bowl; serve hot.

It tastes weird, but I'll admit it's pretty in a very orange way.

My Rating: 2/5 "The first issue I had with this is that the sweet potatoes didn't cook enough. When I took them out of the oven they were about as tough as they were when they went in. Now, this might be because I was using huge sweet potatoes, so I'll let that slide for a minute. But another serious hiccup with this recipe is that it seems like it's going to come out interestingly-spiced but really all you taste in the end is the black pepper. You taste that even more than you taste the vegetables themselves. The leftovers of this went in the trash, which as y'all know is not something I do idly."
