Angel Hair Pasta in Herb-Wine Sauce

Cooking in the Nude for Wine Lovers, p. 83

Step One:

½ cup Sauternes or other dry white wine

4 Tbsp. butter

1 cup whipping cream

½ tsp. salt

1/8 tsp. freshly grated nutmeg

Pinch of cayenne

I had this laying around and it worked nicely.

In saucepan over medium heat, bring wine to a boil and boil until reduced by half. Whisk in butter. Add remaining ingredients and simmer 10 minutes or until slightly thickened. Meanwhile, begin Step Two.

Step Two:

½ lb. pasta, angel hair or spaghettini

Cook pasta according to package directions until al dente. Drain and transfer to warm serving bowl.

Step Three:

¼ cup Parmesan cheese

¼ cup freshly minced basil

¼ cup freshly minced parsley

2 tsp. marjoram

Salt and freshly ground black pepper to taste

Turn heat under sauce to low; whisk in cheese and herbs.

Season with salt and pepper. Gently toss with pasta and serve.

It would have been prettier if Aldi would have had fresh basil, but it was still beige-beautiful like this.
