Cooking in the Nude for Wine Lovers, p. 83
Step One:
½ cup Sauternes or other dry white wine
4 Tbsp. butter
1 cup whipping cream
½ tsp. salt
1/8 tsp. freshly grated nutmeg
Pinch of cayenne

I had this laying around and it worked nicely.
In saucepan over medium heat, bring wine to a boil and
boil until reduced by half. Whisk in butter. Add remaining ingredients and
simmer 10 minutes or until slightly thickened. Meanwhile, begin Step Two.
Step Two:
½ lb. pasta, angel hair or spaghettini
Cook pasta according to package directions until al
dente. Drain and transfer to warm serving bowl.
Step Three:
¼ cup Parmesan cheese
¼ cup freshly minced basil
¼ cup freshly minced parsley
2 tsp. marjoram
Salt and freshly ground black pepper to
taste
Turn heat under sauce to low; whisk in cheese and herbs.

Season with salt and pepper. Gently toss with pasta and serve.

| It would have been prettier if Aldi would have had fresh basil, but it was still beige-beautiful like this. |
My Rating: 5/5 "The nuance in this flavor is amazing. There's so much going on, but it all blends together. The fact that it's a cream sauce is just icing on the cake. Great stuff!"
