Cheese Biscuits in Tomato Sauce

Log Cabin Cooking, p. 32

1 onion, chopped

1 tsp. butter

3 Tbs. flour

1 tsp. sugar

1 qt. [32 ounces] canned stewed tomatoes or about 7 ripe, chopped, peeled tomatoes cooked in a pan to release juices

Dried or fresh herbs (oregano, basil, or thyme)

1 cup grated cheddar cheese

1 recipe biscuit dough, uncooked

This counts as one recipe of biscuit dough, right?


Saute chopped onion in a little butter until translucent. Blend in flour. Add tomatoes, sugar, salt and pepper. Mix well in a saucepan and bring to a boil. 

This part smells nice


Add herbs, pour into a baking dish, cover with biscuits, and sprinkle with cheese. 

You are, of course, allowed to use EVEN MORE CHEESE if you want to


Bake in a hot 400F oven about 15 minutes until biscuits are done and cheese bubbles. Call everyone to the table and have them ready to eat before you take the dish out of the oven.

My Rating: 3/5 "The flavors here are great, but the textures not so much. Eating the big hunks of tomato kind of got in the way of the otherwise comforting mouthfeel, and after a while the biscuits started to get soggy. The cheese was a solid addition, though, that added some substance. I've made something like this before with Bisquick and tomato soup and that was more fun to eat, so try that approach instead."
