Corn Chowder

Energy Connections August 2024

1 pound bacon, chopped

4-6 large potatoes, diced

½ to 1 onion, chopped

2 14.75-ounce cans cream corn

5-6 12-ounce cans evaporated milk

Salt and pepper to taste

A pound of bacon makes a nice slap sound when you dump it onto a cutting mat.


Saute bacon, potatoes, and onions together in a large frying pan over medium heat until bacon is done and potatoes are desired tenderness.

I got impatient and didn't cook things for as long as I probably should have. Learn from my mistake.


Set temp to medium-low and mix in evaporated milk and cream corn.

Add salt and pepper to taste.

Simmer and stir until chowder reaches desired temperature. (DO NOT BOIL.)

You'll need a big ol' pot for this.


My Rating: 4/5 "Although this is probably the simplest corn chowder I've ever made, it's still awesome. The sweetness of the corn and the smoky savoryness of the bacon blend well. The potatoes add bulk. It's a very filling soup!"
