The Case of the Smothered Pork Chops

The Nancy Drew Cookbook, p. 56

4 thick pork chops

½ cup uncooked rice

1 medium onion

1 lemon

1 can beef consommé or bouillon

Salt

Pepper

Heat the oven to 325F.

Cut fat off the pork chops. Slowly melt the fat in a skillet over low heat. Put the chops in and brown on both sides. 

These were THICK-thick chops.


Pour rice into a baking dish and place the browned chops over the rice.

Peel and cut the onion into 4 slices and place 1 on each chop. 

Pigs in hats!


Sprinkle with salt and pepper. Cut the lemon into 4 slices and set on top of the onion slices. Pour the consommé over the chops. Cover the dish. Bake for 1 hour.

Well that's unusual-looking.

My Rating: 3/5 "These chops are cute, but that's about the extent of their appeal. They came out dry and the only flavor that really sunk into them was the onion. (I was exited for a hint of lemon but I couldn't pick up anything like that in the flavor.) The rice was too salty and rich because of the beef broth and it didn't go well with the pork. On the other hand they were filling since they were so thick, so that's a bonus. My mom was over for dinner and she thought they were good."
