10-12 oz. fresh broccoli
1 (12 oz.) cartons cream of mushrooms
condensed soup
2 cups bowtie pasta
¾ cup chopped shallots
¼ cup butter
6 oz. cheese sauce (made with cheddar
cheese, cream, and flour)
Salt to taste
Ground black pepper to taste

I didn't have the patience to make my own cheese sauce. This worked fine.
Cook bowtie pasta as directed on box.
Saute shallots in butter until done.
Cook broccoli until tender in microwave or steamer.
Mix together broccoli, soup, pasta, shallots, butter or margarine, and cheese sauce.

Season with salt and pepper to taste. Place in a 9
x 13 inch oven proof dish. Bake for 30 to 40 minutes at 350F.

My Rating: 4/5 "This is remarkable for a cheesy casserole because the cheese isn't overwhelming. The ratio of sauce to soup mitigates the sharpness of the cheese. (Of course using a mild cheese dip helped on that front as well.) And because the cheese doesn't dominate the entire flavor profile you can enjoy the broccoli-ness as well!"
