Black-Eyed Pea and Tomato Salsa

Cooking Light April 2011, p. 38

1 cup chopped tomatoes
¼ cup prechopped red onion
3 tablespoons chopped poblano chile
2 tablespoons chopped fresh cilantro
2 ½ tablespoons fresh lime juice
¼ teaspoon minced fresh garlic
1/8 teaspoon salt
1/8 teaspoon ground cumin
1/8 teaspoon freshly ground black pepper

1 (15.8-ounce) can black-eyed peas, rinsed and drained

Happy choppins! Be sure to wash your hands after you chop the chile!


Place all ingredients in a large bowl, and toss to combine. 

I was surprised that black-eyed peas weren't in the "beans" section. What ARE they?

My Rating: 4/5 "Lots and lots of flavor! It took this to a cookout and people seemed impressed a) that it was fresh salsa, and b) that it packed so much punch! I think that the lime juice is the real pivot here, but each of the tastes helps contribute to the pizzazz of the whole."
