Cheesy Bacon Meatloaf

Santa’s Recipes for a Great Christmas 5th Edition, p. 31

1 lb. ground beef
1 egg, lightly beaten
1 cup shredded cheddar cheese
¼ cup milk
¼ cup dry bread crumbs
½ tsp. each garlic powder, seasoning salt, dried oregano leaves
1/8 tsp. cracked black pepper (optional)
9 slices fully cooked bacon

Preheat oven to 400 degrees F. Mix meat, egg, cheese, milk, bread crumbs and seasonings. 

Unmixed.

Mixed!


Shape into loaf in 9 x 5 inch loaf pan. Top with bacon slices. 

Gobble gobble! says the bacon.


Bake 1 hour or until center is no longer pink. Remove from oven. Let stand 5 minutes before removing from pan. 

It pulled away from the sides while it baked, which I thought was interesting.

Cut into slices to serve.


Served up with some tabbouleh salad from Trader Joe's!

My Rating: 4/5 "I try not to eat too much greasy food, and this is certainly greasy food. But if you're going to indulge, this is a pretty decadent combination of flavors. Don't eat it right before you have to go somewhere and do stuff, because you're going to have the Itis pretty bad after you finish it."
