One-Pan Taco Dinner


1 bag boil-in-bag white or brown rice
Non-stick cooking spray
1 pound lean ground beef
1 packet (1 ¼ ounces) taco seasoning mix
½ cup water
1 cup shredded cheddar cheese
2 cups shredded lettuce
1 large tomato, chopped
Salsa, optional


Prepare rice according to package directions. Coat a large non-stick skillet with non-stick cooking spray. Add meat and brown over medium-high heat; drain excess fat. Add seasoning mix, water and cooked rice. 

Such protein.

Stir and cook 2 minutes. Sprinkle with cheese. 

This really is wonderfully simple to make.

Top with lettuce and tomato just before serving. Serve with salsa, if desired. 

Put the lettuce on at the very very end so it doesn't get wilty.

My Rating: 4/5 "You get a nice taco flavor here, but it's almost even nicer than tacos because you can eat it with a spoon and you don't have to worry about it dripping on you. The lettuce and tomato are nice and cool and refreshing with the meat and cheese. Good stuff!"
