Black Bean Salsa with Pineapple

 Bush’s

1 (15 oz) can black beans, rinsed and drained

2 cups pineapple tidbits, drained with juice reserved

1 cup red bell pepper, diced

6 green onions, thinly sliced

¼ cilantro leaves

¼ cup reserved pineapple juice

1 Tbsp olive oil

1 jalapeno pepper, seeded and minced

Get out all your angst at the world by chopping some tasty veggies!

Combine all ingredients in a bowl. 

I used a bunch of mini sweet peppers we had in the fridge, which added a nice variety of color.

Toss and serve.

A refreshing, summery dinner or snack!

My Rating: 4/5 "A good, sweet salsa! The pineapple makes it go down easy, and the beans help it sit happily in your tummy. I could actually have handled more spice (maybe another half a jalapeno), but as-is it's still a treat. Enjoy!"
