Scalloped Ham & Broccoli Potatoes

1 (5.25 ounce) package scalloped potatoes
2 cups boiling water
¾ cup half & half
2 tablespoons butter
2 cups diced ham
2 cups frozen broccoli cuts
1 cup shredded Cheddar cheese
1 (6 ounce) can French fried onions

In large mixing bowl, combine potatoes and seasoning mix, boiling water, half & half, butter, ham, broccoli, cheese and ½ the fried onions.

WARNING: Eating this recipe may make you die approximately 2.5 minutes sooner.

Being classy, we diced up slices of honey ham. But we got fresh broccoli, so surely that evens things out...

Transfer to a 13x9-inch baking dish that has been sprayed with no-stick cooking spray.

Satisfying arrangement, until I realized that I had forgotten to put the cheese in and had to wrench it out of the oven.

Bake in a preheated 400F oven 30 minutes. Top with remaining fried onions and continue baking 5 minutes.

The onions on top get crunchy and delicious. :)

My best shot at making casserole seem photogenic.

My Rating: 4/5 "There were lots of nice flavors going on. If you're not used to a lot of starch in your diet it kind of curls up in a ball in your stomach and sits there for a while. But it's good-tasting, even if it's not good for you."
