English muffin
½ cup
tuna salad

slices Cheddar, Swiss or Monterey Jack cheese
Preheat the broiler, with the top oven rack just under the
broiling unit.
Cut an English muffin in half and toast each half in a
toaster.
If you don't do this they get soggy. |
Spread tuna salad on each half.
I was greedy and made two portions. And I don't have one single regret about it. |
Place a slice of cheese on top of the
tuna.

Place the muffins on a baking sheet, metal pie pan or broiling pan with a
rack and put under the broiler.

Broil the muffins for one minute, or until the cheese
melts. Watch them carefully. It seems like one micro-second after the cheese
melts, it blackens. Serve immediately
