APRICOT MUSTARD:
1/3 cup apricot preserves
2 tablespoons brown mustard
SANDWICHES:
8 slices pumpernickel, rye, or wheat
bread
8 ounces thinly sliced cooked ham or
turkey
4 ounces thinly sliced Havarti cheese
Spinach or lettuce leaves

Yes, yes, you're going to combine this with jelly.
For apricot mustard, in a small bowl combine apricot
preserves and mustard.
On one side of each slice of bread, spread about 2 teaspoons apricot mustard. Put one-fourth of the ham or turkey and cheese over the mustard on half of the bread slices. Top with spinach or lettuce leaves.

Cover with
remaining bread slices, mustard-side down. Halve sandwiches.
Served with some nice salt and vinegar potato chips
My Rating: 4/5 "This is a pretty stacked sandwich. There's lots of meat in there and more than minimal cheese. I was worried that the apricot mustard was going to weird me out, but it actually added a pleasant little punch to the sandwich. Hooray for sandwiches!"
