Southwestern Black Beans & Corn


1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with mild green chiles, drained
¼ cup chopped fresh cilantro
3 green onions, chopped
1 ½ teaspoons ground cumin

This is what catharsis looks like. 


In medium microwave-safe bowl, combine all ingredients; salt to taste.

To me, "salt to taste" means "avoid salt." But this is a free country and all that, so live how you wanna live. 


Microwave (HIGH) 3-5 minutes or until heated through.

Served with a swoon-worthy meal that Matt made, including grilled steak and grilled portobello mushroom caps marinated in soy sauce and spices. YUM.



Tip: For a spicier dish, add 1 (4 ounce) can diced jalapenos. 


My Rating: 3/5 "Great textures! It's a little tangy, but if I made it again I think I'd take the suggestion for the additional jalapenos, just to rev things up even more. It was good as-is with our meal, but then Matt ate the leftovers cold with tortilla chips and said it was ten times better that way. Food for thought!"
