Doritos Casserole

South Dakota Governors Residence Cookbook, p. 109

1 lb. hamburger

1 small can chopped green chili peppers

1 can enchilada sauce

1 can cream of mushroom soup

1 can cream of chicken soup

1 pkg. Doritos

8 oz. Monterey Jack cheese

It might be fun to experiment with different flavors of Doritos, but this is the one we went with.


Brown hamburger – stir until crumbly. Pour off grease. Add green chili peppers, enchilada sauce, mushroom soup, cream of chicken soup. Mix well. Cook until bubbly. Spread Doritos in a baking dish. 

This is your "oh God what have I done?" moment of the recipe.


Spoon soup mixture over Doritos. Top with cheese. 

So much cheese!


Bake at 400F until cheese melts.

Trust me, what it lacks in aesthetics it makes up for in flavor.
