Black Bean & Roasted Red Pepper Dip

Mission

1 package (1 oz.) taco spices and seasonings

1 can (15 oz.) black beans, rinsed and drained

1 jar (7 oz.) roasted red peppers, drained

1 package (12 oz.) light cream cheese

1 Tbsp. chopped cilantro

1 to 2 teaspoons lime juice

Garnishes: chopped tomato and fresh cilantro

Tortilla strips

I didn't even know these existed!

In food processor combine all ingredients except garnishes; mix thoroughly. Serve with tortilla strips and assorted raw vegetables.

Vegetables? Naw.

My Rating: 5/5 "I never thought I could get this excited about bean dip. But what a bean dip! The peppers don't do much but add a little zing, but that little extra pizzazz puts this dish yards ahead of the bean dip you find neglected in a corner at parties. Give it a whirl!"
