Chipotle & Jack Chicken Sausage Wraps

Johnsonville

1 medium onion, chopped

1 medium red bell pepper, chopped

1 cup frozen corn, thawed

1 tablespoon olive oil

1 package (12 ounce) Chipotle & Jack chicken sausage, chopped

1 tablespoon lemon juice

5 flour tortillas (8 inch), warmed

2/3 cup refried beans (optional)

1 ½ cups shredded Monterey Jack cheese

Shredded lettuce

This was the closest thing I could find to the required sausage at Kessler's.


In a large skillet, saute the onion, pepper and corn in oil until tender. Sitr in sausage and lemon juice; heat through. 

Now that's fun!


Spread 2 tablespoons refried beans over each tortilla. 

Refried beans: Possible the least photogenic of all the foods.


Spoon sausage mixture down the center of tortillas. Sprinkle with cheese and lettuce. Roll up tightly.

That last step is... impossible.

My Rating: 3/5 "I wanted this to be exciting, but it was just kind of a bland not-taco. I liked the insides better as leftovers, maybe because they'd had time to mix flavors more. It's satisfying, just not spectacular."
