Chicken & Rice Casserole

2 cups cubed, cooked chicken

1 (12 oz.) jar chicken gravy

2 cups cooked rice

1 cup shredded cheddar cheese, divided

2 cups frozen chopped broccoli, thawed

¼ tsp. garlic powder

Salt and pepper to taste

Preheat oven to 350F. Combine chicken, gravy, rice, ½ cup cheddar cheese, broccoli and garlic powder in medium bowl. Season with salt and pepper to taste and mix well. 

All kinds of stuff in there.


Spread evenly in 8x8 baking dish. Top with remaining ½ cup of cheddar cheese. Bake 25-30 minutes or until internal temperature reaches 165F.

Hooray for melty cheese!

I used breaded popcorn chicken because it was cheaper and I can't even with grocery prices these days.

My Rating: 3/5 "No fireworks or sparklers here, although the overall effect is pleasant. It's a convenient weeknight dish for sure."
