4 medium baking potatoes, washed and poked
with fork
8 oz. processed cheese product
2 Tbsp. milk
2/3 cup finely shredded fiesta blend cheese
1 tomato, small diced
¼ cup sliced California ripe olives
1 (8 oz.) tub sour cream
1 (24 oz.) jar medium picante sauce

Preheat oven to 350F.
Bake potatoes for 40-45 minutes or until fork tender.
Combine processed cheese product and milk in
microwavable bowl.
Microwave on high for 5 minutes or until cheese product
is completely melted. Stir halfway through.
Cut potatoes open and evenly pour cheese product
mixture on each potato.
Top with remaining ingredients and serve.
Served with a pre-made tortilla crusted stuffed chicken breast from the grocery store. It was a cheesy dinner. |
My Rating: 3/5 "This is satisfying. It's filling. It's pleasant. But my partner made the astute observation that there's nothing really unique about it that makes you whip out your stationary and proverbially write home. I mean, by all means enjoy your baked potato, particularly because it is deliciously drenched in sour cream and picante sauce. But also remember that it's ultimately just a baked potato."
