Chicken & Potato Casserole

1 (4.7 ounce) box scalloped potatoes

2 ¼ cups boiling water

2/3 cup 2% milk

2 cups chopped cooked chicken

1 ½ cups shredded mild cheddar cheese

1 ½ cups crushed cheddar & sour cream potato chips

We're living in a "generic brand or starve" economy.

In large mixing bowl, combine cheese packet from potatoes, boiling water and milk; whisk until smooth. Stir in dried potatoes and chicken; transfer to a greased 8x8-inch baking dish.

Top with shredded cheese and crushed potato chips. Cover with aluminum foil.

Bake in a preheated 400F oven 30 minutes. Remove foil; continue baking until potatoes are tender (about 10-15 minutes).

Nice and crispy on the top!

Served with itself, because what could you pair with this other than like a single plain vegetable?

My Rating: 3/5 "So here we have four kinds of milk products and two kinds of potatoes. In some recipes that might pan out to deliciousness. In this one, it's just super salty and uncomfortably filling. If salty and filling is your bag then you'll love this, though."
