Capri Salad


3 large tomatoes
1 (16 ounce) package pre-sliced fresh mozzarella
12 fresh basil leaves
Balsamic vinaigrette

It's cheaper to slice it yourself. Just sayin'.


Slice each tomato into 4 slices.

Tomatoes, of course, do not come pre-sliced.


On a serving platter, cascade layers of tomatoes, cheese slices and basil leaves.

"Cascade?" I hope that means "stack."



Top salad with desired amount of vinaigrette. Salt and pepper to taste. Serve immediately.

I served mine up with some couscous that had gotten the same seasoning treatment as the tomatoes. A slim, fresh little dinner!

My Rating: 4/5 "Great flavors that leave your tummy happy in a lot of ways. A treat if you're leading a veggie lifestyle but looking for something substantial. Simple to prepare and elegant on the plate. (And "elegant" is not a word I use lightly.)"
