Rock 'n' Rollers



4 (6- to 7-inch) flour tortillas
4 ounces Neufchatel cheese, softened
1/3 cup peach preserves
1 cup (4 ounces) shredded fat-free Cheddar cheese
½ cup packed washed fresh spinach leaves
3 ounces thinly sliced regular or smoked turkey breast

Spread each tortilla evenly with 1 ounce Neufchatel cheese; cover with thin layer of preserves. 

One ounce is actually pretty generous on a tortilla this size.


Sprinkle with Cheddar cheese.

Arrange spinach leaves and turkey over Cheddar cheese. 

I got mesquite smoked turkey to jazz up the flavor a little.


Roll up tortillas; trim ends. 

Toothpicks are helpful here. 


Cover and refrigerate until ready to serve.

Cut ‘rollers’ crosswise in half or diagonally into 1-inch pieces.



Served with some Trader Joe's Carrot-Ginger Soup, some Walmart beans, and some Carrot in Sweet Vinegar.

My Rating: 4/5 "Me and my ineffable sweet tooth were all about this. It's kind of like a Monte Cristo without the frying and with, you know, tortillas. Now, my husband was not a fan of this - too sweet for him, I think. But if you're into cream cheese and comforting textures, this is probably right up your alley."
