Fiesta Nacho Bake

1 lb. ground beef

1 large onion, chopped

1 (1.25 oz.) pkg. taco seasoning mix

1 (16 oz.) can refried beans

1 (13 oz.) bag tortilla chips

12 oz. finely shredded fiesta blend cheese

2 cups medium picante sauce

1 (8 oz.) tub sour cream

1 cup tomatoes, diced

3-4 green onions, chopped

Brown ground beef with onions. Add taco seasoning according to package directions.

That means mixing it with some water and letting it sit for a bit.


Spread beans into the bottom of a 9” x9” pan. 

Good luck.


Layer pan with broken tortilla chips, beef, cheese, picante sauce, and top with more tortilla chips.

Bake for 25 minutes or until golden brown at 350F.

The recipe said it made four servings. Sometimes I fight recipes about portions, but this time it seemed fair.


Serve and garnish with sour cream, tomatoes and chopped green onions.

Because nothing says "Fiesta!" like a casserole
