Jammy Oat Squares

Better Homes & Gardens September 2021, p. 98

1 cup rolled oats

1 cup trail mix, finely chopped

1 cup all-purpose flour

½ cup packed brown sugar

1 tsp. kosher salt

½ cup melted butter

¼ cup peanut butter or almond butter

1 tsp vanilla

3/4 cup berry jam

It's satisfying to watch the trail mix spin around in the food chopper.

Butter an 8-inch square pan; line with parchment so the ends hang over the two sides. In a large bowl combine oats, trail mix, flour, brown sugar, and salt. In a small bowl combine melted butter, peanut butter or almond butter, and vanilla. Stir wet mixture into dry mixture. Reserve 1 cup and press remaining mixture into bottom of pan. Bake at 350F 10 minutes. Meanwhile, combine reserved mixture with an additional ¼ cup rolled oats. Spread ¾ cup berry jam over partially baked crust.

Strawberry spreadable fruit FTW.

Top with oat mixture, squeezing into clumps as you go. Return to oven and bake 20 to 25 minutes or until jam is bubbling and topping is lightly golden. Cool completely; lift out of pan and cut into squares.

Tidy little bars!

My Rating: 5/5 "These are spectacular. I really think it's the chopped-up trail mix that does it, because it adds a ton of flavor you wouldn't expect from this kind of snack. My partner took them to work and came home with zero left over!"
