Cinnamon-Raisin Snack Mix

Betty Crocker Whole Grains: Easy Everyday Recipes, p. 82

¼ cup sugar

1 teaspoon ground cinnamon

¼ cup butter or margarine

1 ½ cups Corn Chex cereal

1 ½ cups Rice Chex cereal

1 ½ cups Wheat Chex cereal

½ cup raisins, sweetened dried cranberries or dried cherries

In small bowl, mix sugar and cinnamon; set aside.

In large microwaveable bowl, microwave butter uncovered on High about 40 seconds, or until melted. Stir in cereals until evenly coated. Microwave uncovered 2 minutes, stirring after 1 minute.

Sprinkle half of the sugar mixture evenly over cereals; stir. Sprinkle with remaining sugar mixture; stir. Microwave uncovered 1 minute. Stir in raisins. Spread on paper towels to cool.

I went the dried cranberry route and it worked out well.

My Rating: 4/5 "This is a pretty great snack mix, and that's not a phrase I use very often. The cinnamon and sugar tie everything together wonderfully and the mix of different kinds of Chex makes it visually fun. I sent this to daycare for my kid's snack day, but I was sad to see it go!"
