Classic Mandarin Orange Salad


½ pound spinach or other salad
1 can (11 or 15 oz.) mandarin oranges, drained
½ cup sliced ripe olives
½ cup sliced red onion
½ cup balsamic vinaigrette
¼ cup crumbled feta cheese

Combine spinach, mandarin oranges, olives and onion in large serving bowl.

I recommend a REALLY large bowl. This is a difficult toss. 


Pour vinaigrette over salad; toss to evenly coat. Top with feta cheese. 

Served up with a little protein!

My Rating: 3/5 "It's a salad! Nice and healthy - not the most flavorful thing in the world, but it's filling. I recommend erring on the side of more mandarin oranges. You may also want to use less spinach so the other flavors can shine through better."
