Black Beans and Mango Salad



1 can (15 oz.) reduced sodium black beans, drained and rinsed
2 cups mango, diced
1 cup sweet red bell pepper, diced
6 green onions, thinly sliced
¼ cup cilantro leaves, chopped
¼ cup fresh lime juice
1 tbsp. olive oil
1 seeded Jalapeno pepper, minced or hot sauce to taste
Salt to taste

So much fun doing all the chopping!


Combine ingredients in a bowl. Toss and serve.

Careful tossing so you don't squish the beans!

Served with a nice roll covered in strawberry-rhubarb jam.
