Creamy Layered Squares



1-1/2 cups boiling water
1 pkg. (0.6 oz.) cherry flavor sugar free gelatin
Ice cubes
1 cup cold water
1-1/2 cups sugar free whipped topping, divided

Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add ice to cold water to make 1-1/2 cups. Add to gelatin; stir until melted. Reserve 1-1/2 cups gelatin. (Do not refrigerate.) REFRIGERATE remaining gelatin 30 min. or until slightly thickened. Whisk ¾ cup whipped topping into chilled gelatin; pour into 8-inch square dish. 

Confession: I really can't stand artificial cherry flavoring, so I used strawberry gelatin to make this. It was delicious.

REFRIGERATE 15 min. or until gelatin is set but not firm. Top with reserved gelatin.

It's a fascinating combination, Jello and whipped topping.


REFRIGERATE 3 hours or until firm. SERVE topped with remaining whipped topping.

My Rating: 4/5 "This is a delicious, delicious sugar-free dessert. It really does taste creamy (and the vanilla in the whipped topping adds wonderful flavor to the fruity gelatin). It's still the consistency of Jello, of course, so it's not especially substantial. It does make for a nice light dessert, though!"
