½ cup white cornmeal
¾ cup flour
½ tsp. baking powder
½ tsp. salt
½ cup sugar
4 Tbs. butter
1 egg
2 tsp. vanilla
1 Tbs. water
Preheat your oven to 350F. Lightly oil a baking sheet
or use parchment paper.
In a medium bowl, mix together the dry ingredients
(cornmeal, flour, baking powder and salt).
In a separate mixing bowl, cream the butter and sugar;
add egg and vanilla. Mix well.
Add the dry ingredients into the wet ingredient mixing
bowl and add water. Stir to combine. Add chocolate chips (or try cranberries,
nuts or cherries).

Drop in small scoops onto the cookie sheet and bake for
10-12 minutes, or until lightly browned.

My Rating: 4/5 "These are a great twist on a classic. The cornmeal adds wonderful texture and a nice natural sweetness. It was also nice that they stayed so cute and bite-sized. You just pop one in your mouth and enjoy!"
