The Star Wars Cookbook II, p. 24
½ bag (14 ounces) tortilla chips
1 can (15 ounces) refried beans
½ cup of your favorite salsa
1 cup shredded jack or cheddar cheese, or a
combination of both
1 small can sliced black olives, drained
1 tablespoon jarred jalapenos, diced
1 cup shredded lettuce
Preheat oven to 350F.
On a large cookie sheet, arrange the chips in one even
layer.
In a bowl, stir the refried beans with 1 tablespoon of
the salsa to thin them. With a spoon, drop the beans onto the chips as evenly
as possible.
Sprinkle the cheese evenly over the beans. Then sprinkle
the olives and diced jalapenos over the top of the cheese.

Bake for 12 to 15 minutes, or until cheese is melted
and bubbly.
Remove from oven. Sprinkle the lettuce and remaining
salsa over the top.
Serve using a spatula.

My Rating: 4/5 "These are pretty standard nachos, but standard nachos are pretty good. I liked the trick of cutting the beans with salsa - it worked well. It's only tongue-numbing if you want it to be, and if that's what you want then use a spicy salsa!"
