Daktronics Employee Cookbook, p. 139
1 lb. ground beef
½ c. chopped onion
1 (16-oz.) pkg. frozen tater tots
1 can pepperjack cheese soup
1 can black beans
1 can green chilies
8 oz. pepperjack cheese
Pinch Lawry’s seasoning salt

This was the closest thing I could find to pepperjack soup at Walmart.
Brown hamburger with onion.

Place hamburger in 9x13
baking dish. Mix in pepperjack cheese soup. You don’t need to add the water or
milk listed on the can. On top of the soup and ground beef mixture, layer the
can of drained black beans. Next, layer on the can of drained green chilies.
Layer tater-tots on top of previous layers. Bake in oven for 30 minutes at
350F. Take out of oven. Sprinkle tater-tots with seasoning salt. Place
pepperjack cheese on top of tater-tots. Place back in oven for 15 more minutes
at 350F.

My Rating: 4/5 "This is legit. I loved the flavorful take on the standard tater-tot casserole vibe. It's a titch on the salty side, but not overwhelming and there's plenty of seasoning to keep the overall effect robust. My 1YO couldn't get enough of this stuff."
