4 eggs
3 Tbsp. ranch dressing
4 slices thin sliced smoked ham, chopped
¼ cup mild salsa, divided
¼ cup Mexican style shredded cheese,
divided
2 flour tortillas

BEAT eggs and dressing with fork until well blended.

Stir in ham and half each of the salsa and cheese.
POUR into nonstick skillet sprayed lightly with cooking
spray. Cook on medium heat 2 to 3 min. or until egg mixture is set, stirring
occasionally.

SPOON half of the egg mixture onto each tortilla; roll
up. Serve topped with the remaining cheese and salsa.

My Rating: 4/5 "Lots of zing! to this flavor. It's very eggy, despite the ham, so if that's not a texture you enjoy then you might want to steer clear. But if you're down with eggs then this is a very nice way to eat them!"
