Easy Greek Salad

Mediterranean Cooking, p. 58

6 romaine lettuce leaves, torn into 1 ½-inch pieces

1 medium cucumber, peeled and sliced

1 medium tomato, chopped

½ cup sliced red onion

1/3 cup crumbled feta cheese

2 tablespoons extra-virgin olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

½ teaspoon salt

Combine lettuce, cucumber, tomato, onion and cheese in large serving bowl.

Such veggies! Much crunch!


Whisk together oil, lemon juice, oregano and salt in small bowl. 

This stuff is LEGIT.


Pour over lettuce mixture; toss until coated. Serve immediately.

Served with our friends' amaaaaazing smoked chicken and homemade tzatziki!


My Rating: 4/5 "Refreshing and crunchy! And it actually is quick and easy to make. I really enjoyed that the lettuce was kind of an accent and the bulk of the salad was made of other vegetables - a great blend overall."
