Crockpot Spinach and Artichoke Dip

Good Health Fall 2017, p. 46

20 oz artichoke hearts

2 cloves garlic, crushed

15 oz spinach, chopped

1/3 cup mayonnaise

8 oz cream cheese

½ cup feta cheese

¾ cup grated parmesan cheese

8 oz sour cream

1 tablespoon red wine vinegar

Me wondering how on earth all this spinach will fit in the crockpot even when it's chopped. (It didn't. I could only fit about half of what the recipe called for.)


Place all ingredients in crockpot. Stir to combine.

Stirring worked better after it had been in there for a minute.


Cover and cook on low for 2 hours. Occasionally stirring to mix.

Serve with favorite vegetables, bread, or crackers.

Served with Wheat Thins, or rather the Meijer-brand version called "Thin Wheats."

My Rating 4/5: "I appreciate that this tried to put a slightly healthier edge on America's favorite appetizer. But I wish the instructions had made clear what size of slow cooker you should use so I could have gotten more spinachy goodness in there."
