Southwest Buddha (Rice) Bowl

4 cups rice, cooked

1 (8 oz.) pkg. shredded taco blend cheese

1 (15 oz.) can black beans, rinsed

2 avocados, sliced

2 medium tomatoes, diced

1 cup whole kernel corn

½ cup cilantro leaves

2 green onions, thinly sliced

¼ cup sour cream

1 lime, cut into 4 wedges

Such happy chopping!


Divide rice equally into four large serving bowls.

Top each bowl in sections with remaining ingredients except sour cream and lime wedges.

So pretty that it even looks good during the assembly process!


Top with sour cream.

Serve with lime wedge to squeeze over bowls.

My Rating: 4/5 "This is a great way to eat hearty and healthy at the same time. The cheese and sour cream bind all of the other unwieldy ingredients together nicely. The lime - which is essential - gives everything a needed kick. My husband, who is not normally one to eat 'healthy,' actually loved this!"
